Acid-Alkaline balance
When food is eaten it is oxidised and the resulting ash is either acid or alkaline. The balance is determined by the balance of mineral salts, i.e. Potassium, sodium, calcium, magnesium rich foods will produce a more alkaline ash, sulphur phosphorus and chlorine a more acid ash. Foods recognised by most people as being acid like Fruit and Vegetables are actually metabolised into alkaline ash, whereas alkaline foods like meat and grains are metabolised into acid ash. High acidity levels in the body lowers our resistance to infections, result in food cravings, allergic reactions, weight problems, aches and pain etc. and can be responsible for a faulty mechanism of carbohydrate digestion which may degenerate into blood sugar/diabetic problems. Because an acid/alkaline balance is extremely important for correct functioning of many systems, i. e. the blood circulation, the body will rob other areas like the bones to maintain correct acid alkaline levels of fluids. Acid foods are important but need to be balanced by more alkaline forming foods: - ALKALINE -forming foods: - All vegetables, except asparagus, broad beans, peas, and Brussels-sprouts. All fruit except plums, rhubarb, cranberries, preserved-pickled-canned and sulphured fruits. Raw milk, Yoghurt, whey, egg white, soya beans, tofu, aduki beans and kidney beans, chestnuts, fresh coconut, millet, buckwheat, honey, most herb (not fruit) teas. NEUTRAL foods: - Almonds, brewers yeast and all sprouted nuts and seeds, and sprouted pulses. ACID- forming foods: - All other foods not mentioned above All meat, fish, gelatine, egg-yolk, cheese, butter, cream and any milk which is pasteurised, cooked, dried or canned. All nuts except those listed above, although the high fat content brings them close to neutral. All grains except Millet. Refined grains/white flour are more acidic than wholegrain. All alcoholic drinks, coffee, cocoa, flavourings, vinegar and black tea. All pulses not listed above.
